(AP) ? No. 7 Florida staved off one huge upset and now will be pulling for another.

Jelani Jenkins returned a blocked punt 36 yards for a touchdown with 2 seconds remaining, capping the comeback and giving the Gators a 27-20 victory against Louisiana-Lafayette on Saturday.

Now, Florida can sit back and root for Auburn to beat Georgia. If the Tigers win, the Gators would clinch the Southeastern Conference's Eastern Division and a spot in the league title game.

No one, though, was thinking about that game late in this one.

Florida (9-1) did little on offense most of the day and looked to be in serious trouble when quarterback Jeff Driskel left the game with an ankle injury.

The Rajin' Cajuns (5-4) led 20-13 after Alonzo Harris' 2-yard run and a blocked punt for a touchdown. But Florida backup Jacoby Brissett rallied the Gators. He found tight end Jordan Reed down the middle for a 39-yard gain and then hit Quinton Dunbar for 3-yard score with 1:42 remaining.

ULL was content to play for overtime.

Loucheiz Purifoy had other thoughts. One of Florida's fastest players, Purifoy sprinted off the edge and got his right hand on Brett Baer's punt. Jenkins picked up the deflection and went untouched the other way.

Florida players and coaches erupted on the sideline, knowing the significance of the situation.

The Gators were coming off eight consecutive games against SEC foes and were supposed to get a break against a middle-of-the-pack team from the Sun Belt Conference. Louisiana-Lafayette was a 27-point underdog, was paid $950,000 to be Florida's homecoming opponent and hadn't been a ranked team in 16 years.

That didn't matter at Florida Field, where the Rajin' Cajuns played smart and waited for the Gators to self-destruct.

Florida was flagged 10 times for 79 yards, including two costly ones on ULL's lone touchdown drive. Lerentee McCray was penalized for being off side on a third-down play that likely would have forced a punt, and Purifoy was called pass interference on another third-down pass.

Those came on the heels on Clay Burton's dropped pass in the end zone. Reed got the ball on an end around and floated it to the sideline, but Burton couldn't haul it in, and Florida settled for a field goal and a 13-3 lead.

(AP) ? Olympic champion Maria Hoefl-Riesch of Germany overcame a nagging hip injury, putting down a blazing second run Saturday to overtake local favorite Tanja Poutiainen of Finland and win the first World Cup slalom of the season.

Hoefl-Riesch trailed Poutiainen after the first run, but had the fastest time in the second for a total time of 1 minute, 55.58 seconds. American teenager Mikaela Shiffrin was third, while defending overall World Cup champion Lindsey Vonn skipped the race to focus on upcoming races in Aspen, Colo.

"It's amazing, I'm so happy," said Hoefl-Riesch, who also won a slalom in Levi in 2009 and was second here in 2010. "I'm already looking forward to next year."

Poutiainen led by 0.30 seconds after the first run to raise hopes of a home victory, but couldn't keep up in the second and finished 0.55 behind Hoefl-Riesch.

"Great to be on the podium with a home race," Poutiainen said

Hoefl-Riesch competed despite limited training because of an ailing hip. She said she wasn't getting enough speed on the flat portions of the course.

"So I knew I had to take a lot of risks on the steep," she said. "I had to attack."

The 17-year-old Shiffrin competed in her first race in Levi ? the northernmost venue on the World Cup circuit, some 80 miles north of the Arctic Circle.

"I'm speechless, really," said Shiffrin, who was also third last in a slalom in Lienz, Austria. "I couldn't really ask for more. ... This is going to give me a lot of confidence."

Slovenia's Tina Maze, who won the giant slalom in the season opener two weeks in Soelden, Austria, was fourth to keep the lead in the overall World Cup standings with 150 points. Hoefl-Riesch is second overall with 124 points and Poutiainen is third with 91.

Austrian slalom specialist Marlies Schild went out in the first run when she straddled a gate just before the finish.

"I had a little mistake before the combination and then I was just straight and yeah ... I have to look at it with my coaches," Schild said.

Schild, the reigning World Cup slalom champion, won the Levi races in 2006 and 2010 and was looking to become the first woman to win three times at the Finnish venue.

Last season, she won six of 10 slaloms.

My article on Thursday about password hygiene prompted many e-mails from readers, some detailing their own struggles with online security, others ready with tips the experts missed.

One reader, Sean Hulbert, e-mailed to say he had spent 20 years in the security industry and occasionally ?taunted hackers? to crack his passwords. ?To this day, I have not been hacked,? he wrote. His secret? The Alt key.

In addition to the experts? tip that a long passphrase?? such as a song lyric or movie quote ? should be used instead of a password and using only the first letter or letters of each word in the phrase, Mr. Hulbert said he makes his password stronger by translating the result using the Alt key. For example, assuming the site allows passwords with special characters, he might take this line from the film ?The Princess Bride? ? ?Hello. My name is Inigo Montoya. You killed my father. Prepare to die.?? and convert it into the 15 character password: ?HmNiImYkMfPtDie.? Holding down the Alt key (on a Mac) as you type would make that password: ??????????????.

Hack that!

Another reader, Roger Bohl, wrote to say he memorizes the same basic password for every online account but tweaks it for each account by adding two or three letters based on his own simple algorithm. For example, he may start with ?HmNiImYkMfPtDie? as his password for every account. Then he may add three or more letters based on the name of the vendor but amended slightly ? maybe three letters down from the alphabet. So for Amazon, he may convert Ama to Dpd (?D? being three letters down the alphabet from the letter ?A?, ?p? being three letters down from ?m? and so on) to make it: HmNiImYkMfPtDieDpd. For Chase, it might be: HmNiImYkMfPtDieFkd.

?Not unbreakable,? Mr. Bohl conceded. ?But better than using a common password and easier to use than a list ? and you don?t have to carry it with you.?

Many readers expressed frustration with the suggestion that they needed different passwords for every single site. ??Your suggestion to never use the same password twice is impractical,? wrote Daniel Dunn. ?Why not, instead, reuse the same password in contexts where it really doesn?t matter if I am hacked??

Indeed, while many experts advise against it, some concede that they will use a ?throwaway? password for sites that do not store personal or financial information, like a recipe forum.

?I use a common browser/e-mail/password combination for what I perceive as low or no risk uses,? wrote Steve Patriquen. ?I then ratchet up on complexity of my security based on the escalating risk.?

David Ziegelheim appreciated the tip about using different Web browsers for different Web activities, but thought it could be taken one step further. ?It should really be coupled with a recommendation to delete all cookies on a regular basis,? Mr. Ziegelheim wrote. ?For a browser dedicated to financial transactions the cookie should be deleted minimally every time the browser is closed.?

Those most critical of the article were ? unsurprisingly ? password protection software vendors like AgileBits, which sells 1Password software.?AgileBits took issue with the fact that both cybersecurity experts cited in the story, Jeremiah Grossman and Paul Kocher, said they did not trust?password protection software because they did not write it themselves, and because if their computer is stolen, hackers could access all their passwords.

?There is a very, very small handful of people who can get away with saying that they will only trust a password management system that they build themselves,? the company wrote in a blog post. ?You?should definitely not trust a password management system that you develop yourself.?

As for what happens to passwords if a computer is stolen, AgileBits said it designed its 1Password software with that possibility in mind. ?We?ve?made it?very, very difficult for password cracking systems, such as?John the Ripper, to recover your Master Password.?

The only people more angered by our password guide than AgileBits were devotees of Bruce Schneier, the security technologist and author.

?I remain skeptical of any article in this space that doesn?t quote or at least refer to Bruce Schneier,? one reader wrote on Twitter. (Indeed, it should be noted that Mr. Schneier designed Password Safe, a password management software that, like LastPass,?SplashData?and?AgileBits,?stores passwords in an encrypted file that you can unlock with one master password.)

Finally, many readers (and even my editor) said that after hearing about my own harrowing experience with my computer?s webcam, they too were now covering their webcam?s lens with masking tape.

A mother's willingness to sacrifice her own health and safety for the sake of her children is a common narrative across cultures ? and by no means unique to humans alone. Female polar bears starve, dolphin mothers stop sleeping and some spider moms give themselves as lunch for their crawly babies' first meal.

Now an unexpected discovery at the University of California, San Francisco (UCSF) shows that even yeast "mothers" do it, giving all to their offspring ? even at the cost of their own lives.

As described this week in the journal Science, the UCSF scientists found that the yeast Saccharomyces cerevisiae ensures the health of its budding offspring by pushing essential internal structures known as mitochondria into them.

Mitochondria are the mini powerhouses of living cells, supplying the chemical energy all yeast and higher life forms need to survive. Like all cellular life, yeast need these structures to survive. In the new paper, the UCSF team describes how yeast cells ferry just the right amount of mitochondria along a network of protein tracks and molecular motors into the young yeastlings, which bud off their mother like mini-me's.

But what surprised the researchers, led by Wallace Marshall, PhD, UCSF associate professor of biochemistry and biophysics and UCSF postdoc Susanne Rafelski, PhD, was how yeast mothers continued to give generous amounts of their mitochondria to their offspring even when it meant hastening their own death.

"The mom will pump in as many as [the bud] needs," said Marshall. "The bud gets more and more as it grows, and mom doesn't get any more."

UCSF, which includes a top-ranked medical center providing patient care and many ongoing clinical studies, also is one of the world's leading institutions pursuing fundamental research in basic biomedical fields, including molecular biology, biochemistry, physiology, biophysics and genetics ? work that offers insight into the ways normal cells function and what sometimes goes wrong in diseases such as cancer, AIDS, diabetes, multiple sclerosis and Alzheimer's.

How Cells Divide

The classic picture of cell division ? a process known as mitosis ? is an even splitting whereby one cell gives birth to two identical copies. Scientists have always reasoned that during this classic division, the mitochondria were likewise evenly split ? the same way that both sides of a pepperoni pizza cut in two would have half the toppings.

But not all cells divide evenly. Human stem cells, for instance, often divide into two cells that look and behave very differently. Some cancer cells do this as well. There is a growing sense in the biomedical field, Marshall said, that understanding how a cell moves its mitochondria around during such uneven divisions may hold some of the clues to understanding aspects of stem cell or cancer biology.

Working with yeast, the UCSF team developed sophisticated microscope and computer techniques that allowed them to track the movement of mitochondria within cells. If these structures had divided randomly, they would expect to find fewer in the bud than in the mother (since the buds are smaller than the mother).

What they found instead was that the yeast mothers gave a consistent amount of mitochondria to their offspring at each generation, and so over time they had fewer and fewer of the organelles themselves. The price they paid to ensure their offspring was healthy was steep: The yeast mothers would eventually give away too many of the mitochondria to survive and begin to die off after 10 generations. By 20 generations, most of the mothers had died.

Mutant forms of yeast, which were much more stingy in giving up their mitochondria, lived much longer.

Compound in grapes, red wine could be key to fighting prostate cancer

ScienceDaily (Nov. 9, 2012) ? Resveratrol, a compound found commonly in grape skins and red wine, has been shown to have several beneficial effects on human health, including cardiovascular health and stroke prevention. Now, a University of Missouri researcher has discovered that the compound can make prostate tumor cells more susceptible to radiation treatment, increasing the chances of a full recovery from all types of prostate cancer, including aggressive tumors.

"Other studies have noted that resveratrol made tumor cells more susceptible to chemotherapy, and we wanted to see if it had the same effect for radiation therapy," said Michael Nicholl, an assistant professor of surgical oncology in the MU School of Medicine. "We found that when exposed to the compound, the tumor cells were more susceptible to radiation treatment, but that the effect was greater than just treating with both compounds separately."

Prostate tumor cells contain very low levels of two proteins, perforin and granzyme B, which can function together to kill cells. However, both proteins need to be highly "expressed" to kill tumor cells. In his study, when Nicholl introduced resveratrol into the prostate tumor cells, the activity of the two proteins increased greatly. Following radiation treatment, Nicholl found that up to 97 percent of the tumor cells died, which is a much higher percentage than treatment with radiation alone.

"It is critical that both proteins, perforin and granzyme B, are present in order to kill the tumor cells, and we found that the resveratrol helped to increase their activity in prostate tumor cells," Nicholl said. "Following the resveratrol-radiation treatment, we realized that we were able to kill many more tumor cells when compared with treating the tumor with radiation alone. It's important to note that this killed all types of prostate tumor cells, including aggressive tumor cells."

Resveratrol is present in grape skins and red wine and available over-the-counter in many health food sections at grocery stores. However, the dosage needed to have an effect on tumor cells is so great that many people would experience uncomfortable side effects.

"We don't need a large dose at the site of the tumor, but the body processes this compound so efficiently that a person needs to ingest a lot of resveratrol to make sure enough of it ends up at the tumor site. Because of that challenge, we have to look at different delivery methods for this compound to be effective," Nicholl said. "It's very attractive as a therapeutic agent since it is a natural compound and something that most of us have consumed in our lifetimes."

Nicholl said that the next step would be to test the procedure in an animal model before any clinical trials can be initiated. Nicholl's studies were published in the Journal of Andrology and Cancer Science. The early-stage results of this research are promising. If additional studies, including animal studies, are successful within the next few years, MU officials will request authority from the federal government to begin human drug development (this is commonly referred to as the "investigative new drug" status). After this status has been granted, researchers may conduct human clinical trials with the hope of developing new treatments for cancer.

That exclamation mark really rubbed the salt in the wound. I knew that Lowell Heddings, the man behind the?@HowToGeek Twitter account and an?eponymous website, had only unfollowed me to help me test an app, but ... ouch.

The app's called Sayonara and it can be downloaded from the Apple App Store for two bucks. It takes just a few seconds to set up (it snags your Twitter login details from the Twitter for iOS app) and then it runs quietly in the background?? until someone unfollows you on Twitter.

Less than a minute after someone decides to take his or her Twitter relationship with you down a notch, Sayonara triggers a little notification. Tap the notification or open the app and you'll be able to see the user's last few tweets along with buttons allowing you to quickly unfollow or block him or her. That's all there is to it.

Sayonara does what it's supposed to well enough to justify the $2 price tag to folks who are obsessed with tracking their Twitter followers, but let's be honest. Do we really want to deal with the emotional drama of knowing exactly when someone unfollowed us? Which tweet made him click unfollow? Did she just not like your new profile photo? What if you had tweeted more #NateSilverFacts?? would he have kept following you??There's not an app to tell us that ? yet.

Winter Storm Athena damages could mean additional relief from the ...

Mother Nature has been seriously ticked off recently and the folks in the Northeast have sure been on the receiving end of her temper.

On the heels of Superstorm nee Hurricane Sandy, a nor'easter blasted, well, the northeast.

And some of the areas that were declared major disasters because of Sandy also were hit by Winter Storm Athena.

Winter storm names: What? You didn't know the northeaster had a name?

Don't worry; you're not too far behind the curve. The naming of winter storms just began this week.

The names are not official christenings from the National Weather Service (NWS). The naming convention is from The Weather Channel (TWC).

So far, the cable television channel has named two winter storms, the nor'easter Athena and Brutus, which just rolled into Montana.

What names are next? Here's the list:

That's an interesting collection. The name that immediately caught my attention was the initial Q.

Is Q for the James Bond spy gadget guru or maybe the Star Trek: Next Generation villain?

Nope, Q is the Broadway Express subway line in New York City.

Why names winter storms: The name choices aside, why use them at all?

Cynics, and I'm among them, believe it's a rating driven move.

Even one of TWC's sister meteorological sites, the recently acquired Weather Underground, called the storm names a really bad idea.

TWC, however, has several other reasons in support of winter storm names:

  • Naming a storm raises awareness.
  • Attaching a name makes it much easier to follow a weather system's progress.
  • A storm with a name takes on a personality all its own, which adds to awareness.
  • In today's social media world, a name makes it much easier to reference in communication.
  • A named storm is easier to remember and refer to in the future.

We shall see whether the naming sticks.

Meanwhile, the National Weather Service is reiterating that naming winter storms isn't part of its protocol.?

In a memo to NWS employees, the federal agency reminds them to "please refrain from using the term Athena [or any other winter storm names] in any of our products."

Getting tax help after major storms: Regardless of what a storm system is called, officially or unofficially, when it's a major disaster, victims might be able to get some recovery help from the Internal Revenue Service.

Because of Sandy, this week's Weekly Tax Tip is one you've seen many times before but it's advice that, unfortunately, will be needed as long as Mother Nature stays on the rampage: Get disaster relief from the IRS.

It's not always the easiest process.

You'll need to determine whether to claim the qualifying losses from a major disaster on your filing for the year in which the storm hit or to amend the previous year's return.

This means extra worksheets since you can't simply deduct the full amount of your losses. If you have insurance, you have to take reimbursements from the policy into account, as well as make sure you losses are more than $100.

And if you decide you want to file an amended return so you can get added tax refund money in hand sooner to help pay for repairs, you'll have to fill out and send Form 1040X by hand. The IRS doesn't yet accept e-filed amended returns.

But it could be worth it. And every bit of help, especially from an unexpected source such as the IRS, is welcome when you've gone through a major natural disaster.

Video chatting has become a fairly common practice, with services like Skype and FaceTime allowing families and friends to easily converse via webcam, but the connection is often limited to the two people chatting or a small party.

Specialized video streaming services and platforms open the potential audience up, letting anyone with a browser or connected device view the video stream. ?Some services also allow users to monetize their stream, great for personalities that might draw a consistently large following.

Here?s some services and aspects to consider for live streaming video online:

Services

Most streaming services offer a similar experience, providing an online admin page where users can launch a stream and set the stream specifics, like event/show title and the stream quality (resolution, sound quality, etc). ?The services also provide a customizable landing page where the user can specify a channel name and description

A few popular web streaming services are Justin.tv (www.justin.tv), Livestream (www.livestream.com), and UStream.tv (www.ustream.tv). ?All are free to try, so it?s a good idea to give each one a test run through to see which has your preferred interface and features.

It?s also possible to live stream from a mobile device or smartphone. ?The services listed previously all offer apps that can broadcast video from your mobile device?s camera. ?Some services, like Qik (www.qik.com), specialize in mobile streaming, so you might find that they work a little better for mobile device streaming than their desktop-centric counterparts.

Devices and technology

After choosing a service, you?ll need to make sure you have a camera or video/audio source, as well as an active internet connection.

On the desktop, almost any camera that your operating system recognizes can be used with the main live streaming services. ?This includes USB webcams, built-in monitor webcams, digital cameras and camcorders, among others. ?Mobile streamers can use the device?s built in camera(s), though the rear-facing camera is usually of better quality.

Audio can go through the same source as video, if the device has a microphone, otherwise you?ll need a way to get audio into the system. ?Standard microphones connected to the computer?s audio-in or USB port will work.

Live streaming generally works best over a wired internet connection, but will work if the streaming devices is over Wi-Fi. ?Any signal issues, however, may affect the quality of the stream. ?It is possible to transmit a watchable stream over cellular networks, like 3G, but you?ll want to minimize movement and keep the camera stationary as much as possible.

Making A Small Business Marketing Plan by Judith Morgan ...

I?ve got something I want to bring to the attention of the world over the next few days and weeks so I am drawing up a marketing plan. I am going to do all the things I know how to do and some new ones as well. Here?s some thoughts about marketing in case you find yourself in a similar situation right now or coming up soon.

There are three main strands to my marketing plan ? the pure marketing, the commercial marketing and the woo woo marketing.

Pure marketing for me must always centre on the written word, because that?s what I LOVE to do. So I shall be stepping up my blogging and aiming to add value to my readers and potential clients in every piece. I?m going to go for writing every day Monday to Friday. I read this recently and know it to be true from my own experience. Plus it?s what we teach our clients in The Blog Partnership.

?HubSpot says that its customers that increase their blogging from 3-5 times per month to 6-8 times per month nearly double their online leads. And then when its customers manage to blog 15 times per month (or more), lead gen skyrockets.??Read more:

For me this would also include a weekly ezine and daily social media. I use Facebook now for general noise-making/hanging out online and like to use Twitter to see if I can craft some near perfect messages in 140 characters or less, a beautiful challenge for a writer. And I want to create a new ?sticky? post on my blog. That?s one which stays at the top so its highly visible to all new visitors.

Pure marketing continues with recording my blogs on Audioboo. I like a little bit of audio too, always have, and one day want to have my own radio show. Now there?s a goal. I like interviewing people in audio and in written pieces here on Entrepreneur Soul and I plan to do some swaps so if you haven?t been featured on our SuperBlog and we haven?t been featured on yours, do get in touch and let?s swap?

Good advice is always to hang out in online forums, special interest groups where you are a member. I am a member right now of a couple, one about writing and one about coaching, but often I find this the hardest thing to do for me as I always have to remember to go there, whereas my habit is for things to come to me via email or Google Reader or something like that. Note to self: subscribe via RSS reader to these groups.

I came off most social media a year or two ago and am only now just getting back into it. I need to create a Linkedin profile but seem to be resisting that. It?s definitely quite high up now on my social media marketing To Do List. Do you measure the return on your investment on the time you spend on social media? Do you know what?s working so you can do more of that and stop wasting time on the other? I highly recommend that although obviously, with marketing, we have to kiss a lot of frogs before we know which ones are the ?princes, so don?t pull your effort too soon, before you?ve properly had time to evaluate your ROI.

I?m going to get an accountability partner, someone I know who loves marketing as much as I do, and who will have other creative ideas to add into the mix and keep me results-oriented.

Now to my commercial marketing. For this business I have in mind a Refer-A-Friend scheme whereby people will be paid ?100 for each introduction to the project. I am evaluating the best system for that and for me, best would be ones my clients enjoy using because they are easy and fun. I?m a bit bored with traditional affiliate marketing so want to experiment here.

I also want to attract the first 10 clients to my new offering and invite them to be mavens, people of influence who can introduce others of like mind so we are all working with the right mix of people who can help to turn my project into a fascinating and fabulous mastermind team.

And finally my woo woo marketing plan includes meditating to remove any blockages to successful manifestation I may have still lingering the darkest corners of my sub-concious mind and implementing attraction principles to draw the right clients to me.

Customize the Logon, Logoff, and Shutdown Sounds in Windows 8

Customize the Logon, Logoff, and Shutdown Sounds in Windows 8Windows has always allowed to you to customize different alert sounds from the Control Panel, but it remove your ability to customize a few of them in Windows 8?particularly the sounds for logon, logoff, and shutdown. Here's how to change them.

When you go to Control Panel > Sound > Sounds, you'll see these options are no longer available for customization. Well, it turns out, they're just hidden, and you can unhide them with a simple registry tweak. To do so:

  1. Press Win+R to bring up the Run menu. Type in regedit and press OK to bring up the Registry Editor.
  2. Head to HKEY_CURRENT_USER\AppEvents\EventLabels and you should see a number of subfolders, each one representing a different sound in the OS. If you click on one?say, WindowsLogon?you'll see a key in the right pane called ExcludeFromCPL. Double-click it and change its value to 0.
  3. Repeat this process for WindowsLogoff and SystemExit.
  4. Exit the Registry Editor and head back to Control Panel > Sound > Sounds. You should see those options have returned to the menu, and you can customize them as normal.

You can also use this trick on a few other keys in that list, particularly the Notification.Looping.Alarm and Notification.Looping.Call sounds, so you can customize alarms and call notifications too. Hit the link to read more.

Foreclosures continue to impact Chicago-area home prices

Sales of foreclosures and other distressed properties continue to weigh down overall Chicago-area home prices, which declined 2.9 percent in September compared to the same time last year.

That's according to the real estate information company CoreLogic, which released its monthly Home Price Index on Tuesday. Unlike other monthly home price data, CoreLogic tracks distressed properties as well as regular home sales. (Distressed properties include short sales and foreclosures, or real estate owned transactions.)

"The foreclosures are having a pretty substantial impact on the market because there?s still so many of? them," said the Illinois Association of Relators' Jon Broadbooks, who added that foreclosures can take as long as 22 months to wind their way through the legal system. "Until earlier this year, many of them were bottlenecked in the court system. Now they?re beginning to move through, and so that?s having somewhat of a dampening effect on prices."

Without foreclosures or short sales, home prices in Chicago increased nearly two percent compared to September last year.

Nationally, home prices increased five percent, including distressed sales. CoreLogic said it was the biggest increase in more than six years ? since July 2006 ? and the seventh consecutive monthly year-over-year price increased. All but seven states are experiencing these year-over-year price increases.

Illinois is second only to Rhode Island as having the greatest home price depreciation.

Creamy Goat Cheese Pasta with Spinach ... - Two Peas & Their Pod

The temperatures are dropping which means it?s time for comfort food. I guess there is really never a bad time for comfort food, but when it?s dark and cold outside I think comfort food is a must. Pasta is one of my favorite comfort foods and this Creamy Goat Cheese Pasta with Spinach and Roasted Mushrooms is comforting to the very last bite.

This is a great weeknight dinner recipe because it is easy to make and tastes so good after a long day of work. I also like that it is healthier than your average creamy pasta dish. I didn?t use any heavy cream or butter to make this rich and creamy pasta. The goat cheese melts in with the pasta creating a flavorful and creamy pasta dish.

If you don?t think you are a goat cheese fan, don?t turn up your nose just yet. Josh isn?t the biggest goat cheese fan and he loves this pasta dish. The first time I made it he didn?t even know it was goat cheese. I love being sneaky sometimes:)

I also added some vegetables to bulk up the nutritional value and flavor of the pasta. The roasted garlic mushrooms and fresh spinach are so tasty in this pasta dish. I sprinkled in some freshly chopped basil right before serving because fresh basil is always a good idea-especailly when it comes to pasta.

Add Creamy Goat Cheese Pasta with Spinach & Roasted Mushrooms to your dinner menu. This easy meatless pasta dish is a favorite of ours and I think you will enjoy it too!

Yield: Serves 6-8

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Creamy goat cheese pasta with spinach and roasted mushrooms. This easy meatless meal is a regular at our dinner table.

Ingredients:

1 (8 ounce package) Crimini mushrooms, stems removed and cut in half
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon minced garlic
Salt and black pepper, to taste
1 lb pasta (we used Rotini)
4 cups spinach, coarsely chopped
6 ounces goat cheese, crumbled
1/3 cup freshly chopped basil
Salt and black pepper, to taste

Directions:

1. Preheat the oven to 400 degrees F. Place mushrooms in a medium bowl and drizzle with olive oil and balsamic vinegar. Add in garlic and toss. Season with salt and pepper. Spread mushrooms evenly onto a large greased baking sheet. Roast for 15-20 minutes or until mushrooms are tender, stirring once.

2. Cook pasta according to package directions, but before draining, reserve 1 cup cooking water.

3. Toss pasta with roasted mushrooms, spinach, and goat cheese. Add in reserved cooking liquid and stir until the cheese melts and the pasta becomes creamy. Toss in fresh basil and season with salt and pepper. Serve immediately.
